Einkorn Waffles


  • 2 cups whole grain einkorn flour freshly milled if at all possible
  • 2 Tbsp coconut sugar
  • 1 Tbsp + 1 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs beaten
  • 2 cups milk of choice I used coconut milk - carton style
  • 1/4 cup olive oil or melted butter


  • Mix all the dry ingredients in a large bowl.
  • Mix all the wet ingredients in a medium bowl.
  • Add wet ingredients to dry ingredients and then mix thoroughly.
  • Allow batter to sit for 5-10 minutes before cooking for best results. Einkorn wheat takes longer than other types of wheat to absorb liquids.
  • While the batter rests heat your waffle iron on the second to highest setting.
  • Cook as normal using your waffle iron.


Einkorn waffles are a little more delicate than whole wheat waffles. To try and combat this, make sure to oil your waffle iron well and also use a higher setting to make sure the exterior of your waffle is cooked enough not to tear easily.
