2cupswhole grain einkorn flourfreshly milled if at all possible
1Tbsp+ 1 tsp baking powder
2cupsmilk of choiceI used coconut milk - carton style
1/4cupolive oil or melted butter
Mix all the dry ingredients in a large bowl.
Mix all the wet ingredients in a medium bowl.
Add wet ingredients to dry ingredients and then mix thoroughly.
Allow batter to sit for 5-10 minutes before cooking for best results. Einkorn wheat takes longer than other types of wheat to absorb liquids.
While the batter rests heat your waffle iron on the second to highest setting.
Cook as normal using your waffle iron.
Einkorn waffles are a little more delicate than whole wheat waffles. To try and combat this, make sure to oil your waffle iron well and also use a higher setting to make sure the exterior of your waffle is cooked enough not to tear easily.
