These delicious M&M cookies were a childhood Christmas cookie favorite. I think they'll be a favorite of yours, too!
unbleached all purpose flour
of M&M candies
Preheat your oven to 350 degrees.
In a stand mixer (or bowl with a hand beater) cream together the palm shortening, brown sugar, and unrefined sugar.
In a separate bowl combine unbleached flour, baking soda, and salt. Set aside.
Add vanilla extract and eggs to the shortening mixture and combine on slow speed.
Slowly mix the flour mixture into the shortening mixture until completely combined.
Mix the M&Ms in with a wooden spoon.
Using a kitchen teaspoon (that you eat from, not the one you measure from) scoop out some batter, then roll into a ball before flattening slightly on a parchment paper lined pan.
Bake in a 350 degree oven for 10-12 minutes depending on how crisp/chewy you would like them.
Makes about 3 1/2 dozen cookies.
