M&M Cookies are the best

This Christmas has been a whirlwind of activity! We’ve got an amazing church and wonderful group of friends, so we have been having a ton of fun.

Add to the stack that we recently did a cross-town move to a new home, and you’ve got a slammed season. But today we decided to take Christmas break early from homeschool and just make cookies as a family.

We’ve never made these together before

You see, this is a really big deal because for the first time in my children’s lives I am making favorites from my childhood. You see, my oldest, my son, had food allergies from the time he was a year old until he was eight and a half years old. He started out with over 20 different food allergies as a little guy. That massive challenge fueled my dive into better eating, removing harsh chemicals from our home, and natural wellness tools like essential oils and homeopathics.

Seven and a half years of careful work got us much progress. We were down from 20 allergies to only 3 by this past February.

But God

But God healed him completely of the rest.

We had a follow up allergy appointment in February and so the Sunday before I called a few trusted friends at church together to pray for his complete healing.

We gathered in the church sanctuary and prayed with him and for him. We laid hands on him and asked the Father to completely heal the root cause of his food allergies.

And He did.

Just like that.

We arrived at our food allergy appointments the next day and saw science confirm what God had already done.

He was healed.

So here we are, celebrating our first Christmas as a family where we can enjoy any treat that we would like. And it is glorious!

I used to eat these M&M cookies by the fistful as a child at Christmastime!

My mom couldn’t make them fast enough. I think it’s probably safe to admit as an adult that during those years I used to sneak quite a lot of these.

And while it isn’t my normal “healthified” fare, I feel completely OK with celebrating this Christmas with a special treat.

So here’s what you need for this M&M Cookie Recipe:

  • 1 cup palm shortening
  • 1 cup brown sugar
  • 1/2 cup unrefined sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 1/4 cups unbleached all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups of M&M candies

Preheat your oven to 350 degrees.

  • In a stand mixer (or bowl with a hand beater) cream together the palm shortening, brown sugar, and unrefined sugar.
  • In a separate bowl combine unbleached flour, baking soda, and salt. Set aside.
  • Add vanilla extract and eggs to the shortening mixture and combine on slow speed.
  • Slowly mix the flour mixture into the shortening mixture until completely combined.
  • Mix the M&Ms in with a wooden spoon.
  • Using a kitchen teaspoon (that you eat from, not the one you measure from) scoop out some batter, then roll into a ball before flattening slightly on a parchment paper lined pan.
  • Bake in a 350 degree oven for 10-12 minutes depending on how crisp/chewy you would like them.

Makes about 3 1/2 dozen cookies.
