My daughter’s birthday started up bright and exciting with an urgent breakfast request.

“Mom, make me waffles, please! You can’t say no, it’s my birthday!”

And she was right, I couldn’t say no, not only because it was her birthday, but because these waffles are secretly great for her.

She loves them because they taste great, I love them because they’re really good for her.

What is Einkorn?

Several years ago I was introduced to a form of wheat called einkorn wheat. According to researchers it is the only form of wheat that has never been hybridized or cross-bred since ancient days.

In fact, this is the closest we currently have to the wheat that would have been eaten in Biblical times, if not exactly the same as what they would have eaten.

Here’s some fun facts about einkorn wheat:

  • It has the simplest genetic code of all wheat-related plants. It only has 14 chromosomes. By contrast, modern commercial wheat has 42.
  • It has much less gluten than commercial wheat (or emmer or spelt) which makes it easier for some people to digest but also makes it a little different than wheat flour to bake with.
  • Many nutritional sources consider einkorn the be the most nutritious of the wheat-like grains.

I was introduced to einkorn about five years ago by the book Ancient Einkorn: Today’s Staff of Life.

Here’s what you need for this Einkorn Waffle Recipe:

  • 2 cups whole grain einkorn flour (freshly milled if at all possible)
  • 2 Tbsp coconut sugar
  • 1 Tbsp + 1 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs (beaten)
  • 2 cups milk of choice ( I used coconut milk – carton style)
  • 1/4 cup olive oil or melted butter

Here’s how to make it:

  1. Mix all the dry ingredients in a large bowl.
  2. Mix all the wet ingredients in a medium bowl.
  3. Add wet ingredients to dry ingredients and then mix thoroughly.
  4. Allow batter to sit for 5-10 minutes before cooking for best results. Einkorn wheat takes longer than other types of wheat to absorb liquids.
  5. While the batter rests heat your waffle iron on the second to highest setting.
  6. Cook as normal using your waffle iron.

NOTE: Einkorn waffles are a little more delicate than whole wheat waffles. To try and combat this, make sure to oil your waffle iron well and also use a higher setting to make sure the exterior of your waffle is cooked enough not to tear easily.
