This Gluten Free Banana bread is the perfect quick breakfast or snack. Made with healthy ingredients like coconut oil and coconut sugar, it is the perfect choice for a healthy treat.

  • 2 Cups Gluten Free Flour (I recommend Namaste Brand Perfect Flour Blend)
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp ground cinamon
  • ⅛ tsp ground nutmeg
  • 2 eggs, slightly beaten
  • 1½ cups mashed over ripe banana
  • 1 cup coconut sugar
  • ½ cup melted coconut oil
  • ¼ cup chopped walnuts
  1. Preheat the oven to 350 degrees and line a standard sized loaf pan with parchment paper, or lightly grease with coconut oil.
  2. Combine all dry ingredients in a bowl and set aside.
  3. Combine wet ingredients thoroughly and then add to the dry ingredients and stir until just mixed.
  4. Add nuts, and then gently fold in.
  5. Fill your prepared loaf pan with batter and bake in the 350 degree oven for about 60 minutes or until a knife or toothpick inserted in the center comes out clean.
  6. Allow to cool in the pan for 15 minutes and then remove from pan to cool completely.
  7. Wrap in foil and allow to sit overnight if you can stand it right then or just eat it because it smells great!
