Chicken Curry Recipe, savory and mild, even the kids will love it!

  • 3 Tbsp coconut oil
  • 2 Tbsp yellow curry powder
  • 1 medium onion, chopped
  • 3 green apples, peeled and chopped
  • 3 garlic cloves, minced
  • ½ tsp ground ginger
  • 1 tsp salt
  • 1½ cups chicken broth
  • 1 can (15oz) coconut milk
  • 4 chicken breasts, cooked and cut into strips
  • cornstarch (to thicken, may also use arrowroot powder)
  • Hot sauce (optional, and to taste)
  • Cooked rice or quinoa to serve under the curry
  1. Heat coconut oil in a large fry pan or 5 qt dutch oven.
  2. Add curry powder, onion, apples, and garlic. Saute until onions are just soft.
  3. Stir in ginger, salt, optional hot pepper, broth, and coconut milk. Cover and simmer 30 minutes until apples are tender.
  4. Thicken with cornstarch or arrowroot powder if needed.
  5. Add cooked chicken; cover and simmer until heated through.
